Seabass baked with Dor blues and Parmesan
Sea fish baked with cheese Dor blu and Parmesan. To the baked fish with cheese is served rice and zucchini with sauce.
INGREDIENTS
Seabass fresh - 1 pc.
Cheese dor blu - 15 g.
Parmesan cheese - 15 g.
Black rice nerone - 4 tablespoons (boiled)
Garlic oil:
Vegetable oil - 30 ml.
Garlic - 2 teeth.
Zucchini sauce:
Mayonnaise is light - 20 g.
Soy sauce - 1 tsp.
Mandarin - 2 slices (squeeze out the juice)
Garlic - 1 tooth.
Tabasco sauce - 5 drops.
Cheese dor blu - 15 g.
Parmesan cheese - 15 g.

PREPARATION
We cut off the fish's head. We clean from scales. Next, we make longitudinal incisions along the back. Left and right of the ridge. Scissors cut the spine closer to the tail. Hands gently pull out the spine, along with the costal bones. We spread out the fish on the cutting board, grease the fillet with garlic oil (put garlic in the oil and let it brew for 2 hours), lay down the armor blown by hands, sprinkle with parmesan. We wrap our fish in a roll. I insulated the bottom of the roll with a toothpick so that the cheese would not fall out. Next, wrap around the "waist" roll with a clamp made of foil. Be sure to oil it with oil, otherwise it will stick strongly to the skin of the fish.Baked fish for 15 minutes, at a temperature of 180 degrees, in convection mode.For the decor of the dish we cut vegetable slices with a slice of zucchini. Blanch them for a minute in boiling water. Further we put on the board, we make oblique cuts on the one hand, we turn it into a tube, we establish it vertically on a plate. Inward we impose sauce.Rice boil, folded on a sieve. We put in cylindrical capacity (I used a glass), preliminary having greased with its oil. Next, we put the rice on the plate.
